Fathead Dough Crust for Low Carb Pizza
Pizza is an all time favorite for me. I’ve enjoyed pizza for as long as I can remember. My favorite type is meat lovers, particularly from Pizza Hut or Papa Murphy’s. So, when it was time to shift the way I ate, high carb to low carb, I thought that I’d have to give up pizza completely, however that has not been the case. With a little magic and tons of trial and error, I’ve been able to duplicate the flavor of my favorite pizza from Pizza Hut and reduce the number of carbs by switching the type of “crust”.
My first low carb pizza experiment was with a cauliflower crust, total disaster. After trying various versions of cauliflower crusts, I couldn’t ever master one that was strong enough to hold toppings and each required a fork which led to my second option. The second option is a crustless pizza. The crust is made with ground beef, while this is delicious and full of flavor, it has to be eaten with a fork, so it’s kind of like pizza and kind of not, therefore I kept looking for something that was a little more akin to pizza pizza.
So many people in the low carb community raved over Fathead Dough as the best option for everything bread like. I stayed away from it because the initial recipes were made with almond flour. I’m allergic to most nuts and after trying almond flour once, I knew that wouldn’t work out, you know, because allergies.
This is what lead me to more research and alternatives for almond flour.
Finally…

….drumroll ….. coconut flour!
Coconut flour was new to me. I believe I happened upon it around 2017 or so and here we are.
I’d tried it a few times prior to this recipe so I knew the more popular recipes would need a few adaptations.
…like flavor.
Here’s what I did.
Adapted Fathead Dough Recipe
1 1/2 cups of mozzarella cheese
3 tablespoons of cream cheese
3/4 cup of coconut flour
2 eggs
2 tablespoons of melted butter
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
white pepper to taste
1/2 teaspoon oregano (optional)

2 larges eggs (beaten)
1/3 cup of coconut flour
How to Make Fathead Dough Crust for Low Carb Pizza
Based on the ingredients and what I know about the taste of coconut flour, I knew that it would need a little help in the flavor department. This is why I added salt, white pepper, though black can be used if you do not mind the black flakes, onion and garlic powder. I trust that if you use crushed garlic from the jar, the moisture would reduce the dryness.
The Dough
- Add the shredded cheeses to the bowl (some recipes melt them) I don’t.
- Add 2 eggs
- Mix eggs and cheese
- Add soften cream cheese
- Mix
- Add flour, butter, and seasonings
- Mix
- Form ball and let it sit for 10 minutes
- Grease pizza pan with butter
- Put dough in the center of the pan, form circle, top with smooth butter
- Bake for 10 minutes on 375
- Let cool for 10 minutes then add sauce and toppings
- Bake to your desired dones, 15-20 works well
- Eat and don’t save any because it’s so good.
In the Youtube video, there are missteps as it was my first time making it on my own. However, the directions above are worked out perfectly.
