Easy Broccoli Casserole Recipe

Small Portion – Four Servings

 

This is an oldie but goodie. I’ve made this recipe quite a few times since deciding to follow a low carb lifestyle. I initially found the recipe on “Linda Sue’s Low Carb” recipe page and it’s been a favorite since 2007 or 2008 or so. I like it because it’s quite flavorful, easy to make, holds well in the refrigerator, and heats up like a charm which means the leftovers are good. It’s a little higher in fat, which some people may want to reduce, so ground chicken, ground turkey, and low fat cheese may work. I like ground turkey so I would try it that way, but ground chicken is far too bland and may not work well for this. It’s worth a try though.

Ingredients

1 pound of ground beef (substitute ground turkey or ground chicken)

1 medium or large fresh broccoli crown

1 small tub of cream cheese

2 tablespoons of parmesan cheese

1.4 cup of heavy cream or half/half if you want a creamier casserole (optional)

1/4 yellow onion

1/4 cup of mozzarella cheese for topping

2 teaspoons of minced garlic

1 teaspoon of red pepper flakes

4 to 5 slices of chopped bacon

Morton’s Nature Seasoning to taste

salt to taste

How to Make Easy Broccoli Casserole

 

  1. Saute garlic and onion with red pepper flakes
  2. chop and brown bacon
  3. mix ground beef with garlic and onion then brown thoroughly
  4. drain oil
  5. add bacon and a teaspoon of bacon oil (bacon oil is optional)
  6. spoon in cream cheese in chunks
  7. add parmesan cheese
  8. mix well before adding the chopped broccoli
  9. add chopped broccoli in small portions
  10. mix well
  11. transfer to baking dish
  12. spread eveningly
  13. add shredded cheese of your choice (optional)
  14. make for 20 minutes on 380
  15. allow some cooling time before serving
  16. slice and serve
  17. add mushrooms for an added optional flavor and texture
  18. enjoy
