Chicken Stroganoff with Pasta Zero

Chicken Stroganoff with Pasta Zero

 

One of the things I miss most since adopting low-carb eating are casseroles. Whether in the form of the famous Hamburger Helper or a homemade favorite, casseroles are certainly missed.

…especially stroganoff.

….until recently.

I found the secret sauce.

…oh, yes.

I am abundantly grateful for creative people, specifically, creative scientists who worked their logic along with creativity to form such a thing as Pasta Zero.

Pasta Zero you say?

….yes, Pasta Zero.

Pasta Zero shirataki spaghetti contains no wheat or gluten ingredients. It’s made from the root of the konjac plant (sometimes called a konnyaku potato), a low-calorie, low-carbohydrate, soluble fiber food that’s packed with calcium, fiber and folic acid.

Pasta Zero along with some of the traditional trimmings like minced meat, mushroom, sour cream, cheese, and seasoning made this low carb chicken stroganoff possible.

Why chicken instead of beef though?

Well, I only made this slight change to have a dish that’s lower in saturated fat and possible for those who prefer not to eat red meat. I am a red meat lover and will make both the beef and chicken stroganoff varieties.

As many of you know, I’m not a chef, I’m a teacher and writer, so cooking isn’t my talent per se. However, I needed to get better with it as a lifestyle change needed to happen because of aging as well as heart disease and PCOS.

Now, back to this glorious low carb chicken stroganoff and how I made it happen…

Ingredients:

  • 16 oz of ground chicken
  • 1 package of Pasta Zero
  • 1 small can of mushrooms (fresh mushrooms are OK as well)
  • 2 1.2 tablespoons of sour cream
  • 2 tablespoons of red onions (yellow or white onions are OK)
  • 3/4 of Colby Jack/Cheddar Cheese Mix

All other seasonings are to taste:

  • garlic
  • onion powder
  • Morton’s Nature Seasoning
  • butter (to prevent sticking and add flavor to the chicken)
