30 Minute Meal: Egg Roll in a Bowl
Egg Roll in a Bowl or “Crack Slaw” has to be one of the most popular dishes in the low carb and keto communities. It’s popular for many reasons: easy prep, affordable ingredients, easily adaptable to preferred tastes, and simply delicious. Like many others, I happened upon several Egg Roll in a Bowl recipes through Google Searches and on a Pinterest. I tried a few versions of it: pork sausage, ground beef, and ground turkey. My favorite version includes a mix of ground beef and beef kielbasa sausage. The version below includes 1lb of ground beef. I probably should have gone with the ground chuck to save time on draining the grease, but such is life.
Here’s how it all goes down:
- 1 pound of ground beef (sausage, turkey, or combined)
- 1/2 beef kielbasa sausage (optional but suggested)
- Morton’s Seasoning Salt (preferred not required)
- a hint of salt
- 2 teaspoons of soy sauce
- dime to quarter size of sriracha sauce
- two packets of Equal (for a teriyaki flavor)
- 1/2 package of cole slaw mix

It’s just that easy.
Quick prep; chopped onion and garlic, brown ground beef with seasoning of your choice, add the chopped onion, garlic, and cole slaw, slight simmer, and serve.
